A taste of summer!



Around this time of year I start to think, "Will spring ever come?". This ususally inspires me to cook summery dishes and desserts. I found this absolutely delicious/easy recipe. It's so good that I'm going to post it in hopes that it will be added to someone elses list of family favourites. If you end up making it, let me know how it turned out!

Mix in large bowl with a mixer:
1 package of cream cheese
1/2 cup vegetable oil
3 eggs
2 tsp vanilla extract

Add to mixture:
1 pkg yellow/vanilla cake mix
1 cup fresh blueberries or a 15 oz can of blueberries (drained)


Grease and flour a pan and bake at 350 for 45-55 minutes or until nice n' brown.

The cake batter should be nice n' thick and it will come out like a pound cake when it's done.
I also found a recipe for blueberry sauce and I spooned it over the cake as I served it.. here it is in case you'd like it.

Boil in a pot:
1 cup crushed blueberries
1/8 cup sugar
1.5 tsp lemon juice (i used water because I didn't have lemon juice)
Pinch of salt
Let the pot boil for 1 minute before adding 1 tsp vanilla extract. Cool it and then serve!


The cake isn't terribly sweet but it has great flavour on its own, so you can go easy on the sugar in the blueberry sauce.
